THE PEOPLE
BEHIND SOCIETY

Restaurants are remembered not only for the food they serve, but for the people who make them feel like somewhere worth returning to. Society is no different. Ours is a team shaped by different places, different kitchens and different stories, brought together by a shared belief in warm, generous hospitality.

ROSS

In the kitchen, Head Chef Ross McGregor draws on years spent working alongside some of the most respected names in British cooking, including Marco Pierre White and acclaimed chef Brian Maule. Today, his food takes its cue from the easy charm of European cafés and Scotland’s exceptional produce, with an emphasis on good ingredients, simplicity and care.

DYLAN

Scottish-born Sous Chef Dylan has spent seven years training under Head Chef Ross, while also refining his seafood expertise under acclaimed chef Dean Banks.

LUCA

Italian-born and raised, Luca’s love of food began at school in Italy, learning his way around a kitchen from a young age.

KASIA

The newest member of our senior kitchen team, Kasia brings Polish roots and years of experience living and working in Scotland. She sets high standards for those around her and is a passionate advocate for training and development, ensuring every member of the team has the confidence and skills to thrive independently.

THE KITCHEN

VIRGINIA

Originally from Lithuania, Virginia is Society’s resident mother hen and unofficial matriarch, always looking after everyone around her.

DAVID

Scottish-French, with an accent equally at home in Edinburgh and France, David brings extensive experience from fine dining and Michelin-starred restaurants.

OLLIE

Ollie has spent the past few years supporting the launch and opening of restaurants across London and the Middle East, bringing his wealth of international experience and industry expertise to Society.

VICKY

Scottish with Polish roots, Vicky is known for her infectious laugh. When she’s not at Society, you’ll most likely find her doing her favourite thing: chilling on the sofa.

DOMINIKA

Originally from Poland, Dominika brings an easy charm and warmth to Society that guests feel almost immediately.

EMILY

Our Head Barista Emily joins us from Perth, Australia, bringing a little of Australia’s coffee culture and relaxed warmth to Waterloo Place.
